The “Torbido” is the flagship of the production of Cascina Ebreo: a red wine of great character and personality, evolved and structured. Cascina Ebreo is a estate of just over 2 hectares located in the Langhe, the land of Barolo, representing the dream of Peter Weimer and Romy Gygax, who began their adventure in the world of wine in the '90s. It is a label highly appreciated among enthusiasts of great Piedmontese wines. The name comes from the production choice to bottle without filtration, following a production philosophy focused on minimal intervention in the cellar by man and respect for the raw material.
The wine “Torbido” is produced only in the best vintages, when the red grapes reach full ripeness, not only perfectly healthy, but also with rich and intense aromas. The red grapes are very demanding from a pedoclimatic point of view and almost always express themselves with excellent results. The very long growing cycle, late ripening, the preference for sunny and ventilated exposures, but also fresh ones, make the grape difficult to cultivate in other pedoclimatic contexts and in other regions of the world. After the manual harvest, the must is fermented with indigenous yeasts, with skin maceration lasting about 25 days. After aging, it is bottled without filtration.
