We are talking about a product that is rich and complex both on the nose and on the palate, which undergoes aging also in wood to enhance its thickness. The “Salmariano” is a Verdicchio dei Castelli di Jesi Classico Riserva that comes from those grapes that Marotti Campi cultivates in the vineyards surrounding the municipality of Morro d’Alba. We are about 180 meters above sea level, in a terroir characterized by the presence of clay where the vines are trained using the guyot system. The manual harvest is late and begins in mid-October; in the winery, the bunches are destemmed and the grapes are gently pressed. The must obtained ferments in steel tanks at a temperature of 15°C, briefly macerating on the skins. The aging takes place for 12 months on fine lees in steel, and a part of the mass, 20%, matures instead in barrique.
This Verdicchio dei Castelli di Jesi “Salmariano” reveals itself to the eye with a brilliant straw yellow color, characterized by some more golden reflections at the rim. The olfactory spectrum announces itself rich, with fruity aromas that are pleasantly enhanced by more mineral notes and light spicy touches. On the palate, it is harmonious, tasty, with a sip that strikes for its great freshness and for the continuous savory returns.
