To pursue his intent, he has decided to adopt a sensitive approach, which excludes the use of any chemical or synthetic substances in the vineyard, and which continues consistently in the winery. The red Viscà is obtained from grapes coming from vineyards that are about forty years old, located on sandy soils with a steep slope. In the vineyard, the dictates of sustainable agriculture are followed and in the winery, the aim is to intervene as little as possible.intervene as little as possible. The fermentations are therefore spontaneous, carried out by only indigenous yeasts, inside steel and concrete tanks without temperature control. The liquid before bottling is neither filtered nor clarified.
The Viscà wine from Cascina Fornace fills the glass with its compact ruby red appearance. Direct and fragrant nose, where distinct hints of marasca, licorice, and dog rose stand out, as well as a very personal earthy note.
