'Xarel-lo' is a delicious white wine from Penedes with a gourmet and mouth-watering profile that is made according to biodynamic principles. Clear, crisp and fresh, it is rich in citrus aromas, sensations of peach, dried fruit and ginger

The Xarel-lo from the Spanish bodega Can Vallès represents an interpretation of the white grape variety Xarel-lo with a light and refreshing taste, produced in the Catalan territory of Penedès according to the principles of biodynamics. Among the most important varieties of Catalonia, Xarel-lo plays a prominent role, particularly for its widespread use in the production of Cava, the most famous Spanish sparkling wine. The distinctive characteristics of wines made from Xarel-lo grapes are their pleasant aromaticity and pronounced freshness, as well as the valuable hints of citrus and summer fruit.

The Can Vallès Xarel-lo is produced solely from Xarel-lo grapes grown in accordance with the principles of certified biodynamic agriculture on soils composed of limestone, clay, and rocks, at an altitude ranging from 330 to 400 meters above sea level. After harvesting, the clusters are gently pressed and the resulting must undergoes a slow spontaneous alcoholic fermentation in stainless steel tanks by means of indigenous yeasts. Always in steel, the mass remains to mature for a few months until bottling and the further resting in glass that precedes the final market release.

In the glass, the white wine from Penedès Can Vallès Xarel-lo shows a bright straw yellow hue. The aromatic bouquet evokes fragrant sensations of ginger, peach, and dried fruit, combined with hints of orange zest. Fresh and tasty on the palate, very pleasant and light, with an intriguing mineral finish. Thanks to its dynamic and slender taste, this white wine made from Xarel-lo grapes represents the ideal accompaniment to seafood dishes that are not overly elaborate, such as spaghetti with clams or second courses based on blue fish.
