The Champagne Brut Nature "Fleur de l'Europe" from the Fleury winery is a bottle of great expression and elegance produced in the southernmost district of the Champagne region, specifically in Courteron, in the Côte de Bars. The vines are rooted in beautiful hills characterized by clay-limestone soils that manage to give the wines from this area much more structure compared to Champagnes from other districts further north in the region. This sparkling wine is made from a blend of base wines from different vintages, primarily obtained from Pinot Noir and Chardonnay grapes. The Fleury winery, now managed by Jean-Pierre Fleury, has been working for several years following the principles of biodynamic agriculture.
The "Fleur de l'Europe" is a Brut Nature that comes from carefully selected grapes that are hand-harvested in small baskets, as per tradition. Once in the winery, the bunches are manually pressed with a vertical press and fermented for a quarter in oak barrels and for the remaining part in enamelled steel tanks.to obtain the base wine. This is followed by the addition of liqueur de tirage, with refermentation in the bottle on its own yeasts for about 72 months according to the Classic Method, after which the disgorgement is carried out and the addition of liqueur d'expedition which, given the Brut Nature category, includes only the base wine from previous vintages without added sugars.
The Brut Nature "Fleur de l'Europe" presents itself with a bright straw yellow color and a fine and persistent perlage. On the nose, notes of green apple, ripe yellow fruit, white flowers, and acacia honey chase each other. On the palate, it is very enveloping and creamy, with hints reminiscent of orange peel and iodized notes, which denote great freshness and encourage drinking. This non-dosed Champagne is delicate, clean, fresh and at the same time endowed with a beautiful structure that characterizes it, making it very personal.
