The Rosé Brut by Fleury is a meaty and dynamic Champagne, a manifesto of a pioneering biodynamic producer. Indeed, because although the theme of respecting the terroir and converting to organic or biodynamic agriculture is treated today with greater sensitivity, adopting this approach about 30 years ago was pioneering. But the Fleury family, convinced of their choice, decided in 1989 to convert the entire estate to the dictates of Steinerian philosophy, and the results are evident to all, even decades later. The Brut Rosé is a Champagne made from pure Pinot Noir grapes, grown in the Cote Des Bars and sourced from vineyards cultivated biodynamically, resting on Kimmeridgian soils of a clay-limestone matrix. The grape harvest is strictly done by hand, with a double selection of theclusters in the vineyard and in the cellar, then proceeding to the spontaneous alcoholic fermentation of the base wines, which takes place in enamelled tanks. After blending, the second fermentation occurs in the bottle according to the Champenoise method. Aging of about 60 months on the lees.
The Champagne Rosé Brut by Fleury has a bright pink hue, tending towards copper, and presents a fine and persistent perlage. The nose is refined and whispered, but offers attentive tasters delicate notes of wild strawberry, orange peel, rose petals, and golden apple. It has the stride of a marathon runner and reveals itself over time, with a pause in the glass. Like all great bubbles, it is on the palate that it reveals its personality, made of a refined saline structure and a jovial vinosity. Dynamic and smooth, the liquid has a great gastronomic versatility, destined to accompany practically any appetizer and first courses, whether based on fish or dressed with tomato sauces.
