The grapes macerated for 3 days undergo a spontaneous fermentation by indigenous yeasts. The wine is then aged for 24 months and left to rest in the cellar for 3 years. Thanks to its warm and aromatic sip it is perfect to accompany mushroom dishes
The Slovenian artisan winery Mlecnik introduces its Chardonnay, a macerated white wine that well reflects the genuine and authentic personality of its creator Valter Mlecnik. Valter, the last of a long line of winemakers, manages just under 10 hectares in the territory of Vipavska Dolina according to a highly sustainable production approach based on organic farming. All agronomic operations are performed manually, and biodynamic preparations are also used in the field. A significant moment for Valter was his meeting with Josko Gravner, a famous Friulian producer among the pioneers of the artisan wine movement.
The Chardonnay from Mlecnik comes from the homonymous variety worked in purity. The vineyards, rooted in soils made up of marls, clays, and karst rocks, are managed under certified organic practices. Following the manual harvest, the grapes are transferred to the winery and pressed in open oak vats where spontaneous alcoholic fermentation occurs, associated with 3 days of contact between the must and the skins, without temperature control. Subsequently, the mass is transferred to oak barrels for aging for 24 months, at the end of which the liquid is bottled without undergoing any clarification or filtration. Before hitting the market, the wine rests for several years in glass to present itself ready and harmonious.
In the glass, the orange wine Chardonnay Mlecnik expresses an amber-yellow color. The olfactory panorama is a succession of aromas of dehydrated tropical fruit, floral notes, and citrus aromas, tempered by a deep mineral vein. Full, rich, and structured on the palate, endowed with good freshness and an incisive savory note. A delicate tannic sensation accompanies the finish, consistent with the nose.
