The Coda di Volpe “Janare” is the fruit of the work of one of the largest wineries in southern Italy. La Guardiense manages about 1,500 hectares of small contributing members, who cultivate their vineyards with passion and artisanal care. Thanks to this deep bond with the territory, it is able to offer a range of quality labels that perfectly express the history and character of Sannio. The Coda di Volpe vineyards are located in the beautiful hill area of Guardia Sanframondi, at an altitude between 300 and 400 meters above sea level. The calcareous-clay soils and the cool, breezy climate, thanks to the proximity of the Matese Massif, offer the best conditions for cultivating white grape varieties, particularly for the indigenous grapes of the territory. At the end of the harvest, the bunches undergo a cryomaceration process, followed by soft pressing. The must ferments in temperature-controlled stainless steel tanks, and the wine matures for a few months in steel before being bottled for marketing.
