The Lambrusco Spumante Dry "Pruno Nero" from the Cleto Chiarli winery is a fragrant, fruity, and jovial red sparkling wine produced in Castelvetro, in the Modena area of Emilia-Romagna. It is a pure Lambrusco Grasparossa, an indigenous variety typical of this area famous for its not very vigorous vegetative growth, but above all for the particular characteristic that sees the leaves and stems turn red with autumn. The vines are trained using the trellis method on the gentle hills of the province of Modena, characterized by very poor and low permeability soils with a prevalence of sandy and marly clays mixed with limestone blocks of various sizes. The winery is one of the most representative and prestigious names in the entire denomination, founded in 1860 by the innkeeper Cleto and today owning about 100 hectares of vineyards, able to combine the centuries-old bond with the tradition of the territory with the use of cutting-edge technologies.

The "Pruno Nero" Lambrusco Dry is a sparkling wine produced with carefully selected and harvested grapes at their optimal ripeness. The bunches, once they reach the winery, are destemmed and gently pressed before undergoing a maceration of about 48 hours at a temperature of 15 °C. This is followed by alcoholic fermentation, which takes place at low temperatures in temperature-controlled stainless steel containers for a few weeks. Subsequently, the base wine is added with tirage liqueur to undergo refermentation that occurs in pressurized autoclaves with a minimum aging on the lees of 6 months, before proceeding to bottling and future marketing.
