'Nove' Velenosi is a modern white wine from Marche that makes its lightness its stylistic mark, so much so that it is reflected in the name. It is a blend of Chardonnay, Passerina, and Sauvignon, coming from selected vineyards between Ascoli Piceno and Ripatransone. The harvest is anticipated to reduce the sugar content and maintain high freshness. The aging takes place in steel at very low temperatures, thus preserving a slight natural carbonation that gives a characteristic pétillant touch. On the nose, it opens with a fresh and clear bouquet of peach, pineapple, and wildflowers. On the palate, it is elegant, savory, lively, a perfect profile with a plate of spaghetti with clams
