The winemaker Stefano's skill during the maceration phase emerges in all its power, aided by a long resting period in barrel. Dried fruits, hay, and acacia flowers on the nose, ripe pulp and extraordinary finesse on the palate.
The Pinot Grigio Ramato from the Ronco Severo winery is a intense and full-bodied wine produced in Prepotto, in Friuli. This bottle is made from pure Pinot Grigio grapes from vines cultivated using the cappuccina method with two inverted shoots, at about 150 meters above sea level, on soils characterized by rich "ponca", a Friulian term for sandy marls. The winery, owner of about 10 hectares of vineyards, is a small family-run business today managed by Stefano Novello, who has committed to a total renewal of the company, obtaining organic certification.
The Pinot Grigio Ronco Severo is produced with carefully selected grapes from the vineyard, hand-picked in small crates, generally around the second decade of September. The bunches brought to the winery are gently crushed and destemmed, after which they undergo alcoholic fermentation, using only indigenous yeasts, in truncated-conical tanks without temperature control, with skin maceration. It then ages in 40 hectoliter Slavonian oak barrels for about 24 months, of which 11 months in contact with its fine lees, before being bottled on days of the waning moon and released for sale.

On the palate, it is juicy, enveloping, energetic, and fresh, characterized by a long and persistent finish, with intriguing spicy sensations. This Pinot Grigio from the Ronco Severo winery is complex, engaging, and very interesting, made according to the ancient traditions of the past.
