The Pinot Noir wine from the Abbazia di Novacella is one of the classic reds of this historic reality of Alto Adige. In its cellars, wine has been produced since the 12th century, and it still represents the most important brand of the Valle Isarco today. In addition to the white grape vineyards cultivated in the Bressanone area, it has several estates in the Bolzano and Appiano areas, where it grows red grape varieties. The Pinot Noir grapes come from the Cornaiano estate. The vineyards are located at an altitude between 350 and 420 meters above sea level, with a northern and northwestern exposure. The climate cool, with good temperature excursions between day and night temperatures and the suitable soils, consisting of ancient moraine deposits, contribute to creating a perfect habitat for this demanding French grape variety. Fermentation takes place in temperature-controlled stainless steel tanks, with a skin maceration period of a couple of weeks. Before bottling, the wine matures for about six months in 60-hectoliter oak barrels.
