The Prosecco Brut Millesimato from the Bosco del Merlo winery is a fine and very fresh sparkling wine produced at the border between Veneto and Friuli Venezia Giulia, in an area that has always been very suited to viticulture. The Prosecco Millesimato Brut is made from pure Glera grapes from vines over 50 years old planted at high density, to keep the competition among them alive, on soils characterized by the so-called "caranto", a calcareous-clay soil of fluvial-glacial origin capable of transmitting unique characteristics to these vines. The winery, family-run for two generations, is located in a geographically fortunate area that benefits from both the influence of marine breezes and the Prealpi Carsiche and practices a type of viticulture known as reasoned, which aims to reduce, where possible, the use of harmful substances for the vine and the final consumer.
The Brut Prosecco from Bosco del Merlo is a vintage sparkling wine, produced with grapes from a single harvest, whose harvest takes place when the grapes reach their maximum ripeness and during nighttime hours to preserve all their aromaticity. The grapes, destemmed and separated from the skins, are fermented in stainless steel containers at controlled temperature to obtain the base wine. At this point, secondary fermentation in autoclave takes place for the sparkling process, according to the Charmat method, at a temperature of about 13 °C for about 2 months and until the desired perlage and sugar level are reached. The Prosecco is then bottled and is ready to be put on the market.
The Brut Prosecco from the Bosco del Merlo winery presents itself with a pale straw yellow color and a fine, delicate perlage. On the nose, aromas of crunchy fresh fruit appear, including apple, pear, and citrus peel, floral notes reminiscent of wisteria and acacia. On the palate, it is as fresh as on the nose, with good complexity and a saltiness and minerality that make it persistent.
