It originates from the beautiful hills of Valdobbiadene, in the heart of the classic Prosecco area, which has recently been recognized as a UNESCO World Heritage site for the beauty of its natural landscape, shaped by human hands with orderly rows of vineyards. Made with pure Glera grapes, it is characterized by a low sugar dosage, which enhances the typical freshness and sapidity of the terroir. The Valdobbiadene Prosecco Superiore Brut Col de' Salici is produced by a craft reality, which has distinguished itself with a range of vintage labels of particular elegance and finesse, capable of interpreting the authentic character of the territory. The grapes come from the company’s vineyards cultivated on steep slopes, located at an altitude of about 200 meters above sea level, with a southeast exposure. The climate, cool and very breezy, is characterized by significant temperature fluctuations between day and night, and the soils composed of ancient moraine deposits, rich in clays, have been the perfect habitat for indigenous white grape varieties for centuries. The harvest takes place manually around mid-September, and the best bunches, selected directly in the vineyard, are pressed very gently. The free-run must ferments in temperature-controlled stainless steel tanks. The sparkling process and secondary fermentation occur in autoclave.
