The Prosecco from Valdobbiadene Brut Nature Col Fondo ‘Vitale’ from the production reality of Malga Ribelle represents an artisanal label with a pure and sincere soul that reflects the productive spirit of the winemaker Vitale Girardi. Vitale officially started his winemaking project in 2017, after decades during which the grapes cultivated by the family had been destined for sale at local wineries. The Prosecco Col Fondo ‘Vitale’ is the only label produced by the winemaker from his 1.5-hectare vineyard, nourished with manure derived from the cows raised by Vitale himself.
The Valdobbiadene Prosecco Col Fondo ‘Vitale’ Brut Nature Malga Ribelle is crafted from a solid base of Glera, to which approximately 5% of other indigenous varieties Bianchetta, Perera, and Verdiso are added. The vines rest on very steep hilly soils, formed from a mix of clay, sand, and limestone, particularly rich in mineral elements and a local marine-origin rock called “Croda Rospera”. The agronomic management excludes the use of synthetic chemical products and the harvest is carried out entirely by hand. The must obtained from the soft pressing of the grapes undergoes spontaneous alcoholic fermentation in steel tanks while the sparkling process takes place in the bottle through the addition of must to the base wine. During the entire processing, the liquid undergoes no clarification or filtration operations, and the sparkling wine is finally marketed without prior disgorgement.
The ‘Vitale’ Prosecco Valdobbiadene Brut Nature Col Fondo from Malga Ribelle has a straw-yellow color with fine and persistent effervescence. The nose offers pleasant hints of summer fruit, flowers, and herbal notes that lead to a delicate and softly aromatic taste, characterized by a beautiful freshness and an incisive savory-mineral vein.
