The Volnay 'La Cave' by Mark Haisma, a small Australian producer who moved to Burgundy driven by a great love for French wines, is a juicy and crisp wine made from Pinot Noir. On the nose, it presents deep notes of berries, including blackberry, raspberry, and red currant, accompanied by delicate aromas of violet and aromatic herbs. On the palate, it is smooth, dynamic, slightly spicy, and characterized by good acidity. A Volnay of great balance!

The Volnay ‘La Cave’ from Mark Haisma's winery is a Pinot Noir from Burgundy that is crisp, dynamic, and complex at the same time. The climat of ‘La Cave’ is located in the northern part of the AOC of Volnay, just outside the namesake village of Côte de Beaune. After moving from Australia, where he worked as a winemaker at Yarra Yering winery, to France, Mark Haisma established his winery in the village of Gevrey-Chambertin, where he began producing wine partly from his own vineyards and partly from grapes purchased from trusted growers in the region. From the very beginning, Mark immersed himself in the Burgundian reality, and his wines are an authentic reflection of the various climat of origin.

Mark Haisma Volnay ‘La Cave’ is a 100% Pinot Noir from vines that rest on rocky soils characterized by an abundant presence of marl and a low organic matter content. Following manual harvesting, the red winemaking of the grapes takes place with a portion of the whole bunches left uncrushed. The alcoholic fermentation occurs in contact with the skins and, subsequently, the mass is poured into small French oak barrels, new 10-20%, for aging of about a year before bottling and the final market release.

The Volnay ‘La Cave’ by Mark Haisma has a bright and luminous garnet red color. The olfactory profile is told through fascinating fruity suggestions of blackberry, blueberry, currant, and raspberry, combined with subtle smoky hints and floral notes of violet petals. Crisp and juicy taste development, savory and dynamic, characterized by excellent freshness and young, well-present tannins. The recommendation is to pair this Volnay with preparations based on game meats such as duck or pheasant.
