The Barbera vines are trained in guyot on clay-sandy soils, the characteristic Sant’Agata fossil Marls, and silty, at about 300 meters above sea level. The organic cultivation aims for an increasingly quality and respectful production. The work in the winery begins with the destemming and crushing of the grapes. The must is started to ferment in steel tanks with only indigenous yeasts and remaining in contact with the skins for 8-10 days, then extended for a few more days. Subsequently, the wine is kept at a controlled temperature until malolactic fermentation is completed. The aging involves a passage of 12 months in young Slavonian oak barrels.
