"The Plum, I Suppose" by Empirical is a spirit named after the poem "The Rose Family" by Robert Frost. At the base there are plum kernels, which release intense flavors of marzipan, calendula instead releases slightly tannic floral notes reminiscent of plum skin, despite there are no traces of the pulp of the fruit

“The Plum I Suppose” by Empiric is a creation of extraordinary expressive finesse, entirely played on delicate and subtle aromatic sensations that evoke the fresh spring floral nuances and the fruity fragrance of plum. Memories of scents and tastes from a distant past blend together to provide a refined tasting pleasure. In the perfect style of this innovative brand, it is an original distillate that does not draw inspiration from any traditional model, but aims to exalt suggestions derived from the memories of the two creators of this interesting artisanal reality: Lars Williams and Mark Emil Hermansen.

“The Plum I Suppose” was born from the desire of two enthusiasts of the world of distillates to create something absolutely new. A quest based on personal memories, on the scents and aromas that have been sedimented since childhood in their memory. Empirical was founded in 2017, but in just a few years it has made a name for itself precisely for the original spirit of its production. The distillate is the fruit of the wise balance of a few carefully selected ingredients. At its base are the plum stones that give a taste of almond and marzipan, along with fruity nuances. The calendula kombucha, on the other hand, imparts characteristic floral scents and aromas of plum skin. The processing follows the classic method of long infusion in alcohol and subsequent distillation using low-temperature systems, to preserve the intensity and authenticity of the aromas.

“The Plum I Suppose” is born from childhood memories of homemade sweets, reworked from memory and recreated in an attempt to authentically restore those sensations and that genuine and simple taste of yesteryear. Visually, it presents itself as absolutely crystalline and transparent, with a refined floral bouquet, which then gives way to sweet notes of marzipan, of freshly shelled almonds, and aromas of ripe plum. The sip is intense and clear, fresh and finely faceted, with a finish that returns to pleasantly fruity notes, accompanied by a slight tannic sensation. To be enjoyed neat, with ice, or with soda and a splash of fresh lime.
