The Vitovska by Dimitri Cacovich is an excellent expression of this particular white grape variety grown mainly in Friuli Venezia Giulia, right on the border between Italy and Slovenia, where Dimitri Cacovich's winery is located. On the palate, it offers a full and enveloping sip, where the intense notes of yellow fruit that stand out on the nose are perfectly balanced by a delicate mineral vein and a pleasant acidity. A wine of great freshness, telling the story of Carso and its rich wine heritage.

The Vitovska by Dimitri Cacovich represents a handcrafted label strongly tied to its territory of origin: the Friuli Carso. Vitovska is one of the iconic wines of the Carso, where it has been cultivated for centuries. It is an indigenous white grape variety whose distribution is confined to this difficult yet fascinating territory, where it is the second most cultivated grape after Malvasia Istriana, among the few capable of resisting the dry and windy environment of the area. The young winemaker Dimitri Cacovich vinifies this variety traditionally, and maturation takes place in the family cellar that is 300 years old.

Dimitri Cacovich Vitovska is made from only Vitovska grapes grown at the border between the red soil of the Carso and the sandstone of Breg, observing a deep respect for nature and its cycles. Following manual harvesting, the bunches are pressed in open steel tanks for spontaneous alcoholic fermentation conducted by indigenous yeasts without temperature control, accompanied by about 4 days of skin maceration. Once the fermentation process is complete, the mass remains to mature for a few months always in steel and for an additional 6 months in the bottle before final commercialization.

To the eye, the macerated Vitovska by Dimitri Cacovich presents a bright straw-yellow hue tending towards gold. An intriguing olfactory panorama with aromas of pear and ripe peach alternating with fascinating citrus and floral sensations. On the palate, it is intense and fragrant, full and balanced, with a pleasant fresh and savory finish. The producer's recommendation is to serve this Vitovska fresh but not cold, at a temperature of 14-15 °C, to fully enhance its territorial character.
