The Pinot Grigio Ramato Attems is not the result of a trend, but a wine that comes from an ancient tradition of the territory. During the period of the Republic of Venice, Pinot Grigio was simply called ramato, for the natural color of a wine made from grapes that have a pinkish skin. In the past, maceration on the skins was an enological practice almost always applied to all grape varieties and is still particularly suitable for Pinot Grigio today. The process, in fact, enhances its natural richness and aromatic complexity, its softness, and gustatory intensity.
The Pinot Grigio Ramato wine from the Attems winery is the result of vineyards located in the Friulian plain that rises towards the hilly area of Gorizia. From a soil composition perspective, the lowest area is made up of gravel and pebbles of alluvial origin mixed with clays, while towards the first elevations, sedimentations of sandstone and limestone marls typical of Friulian flysch or ponca are already present. The harvest is carried out manually during the last weeks of August and the first weeks of September. After soft pressing, the must remains in contact with the skins for about 10 hours at a temperature of 8 °C, in order to extract aromas and a bit of color. Fermentation takes place in stainless steel tanks at a controlled temperature of 15-17 °C. Before proceeding to bottling, the wine matures for 4 months on the fine lees with periodic bâtonnage.
The Pinot Grigio Ramato from Attems is a wine of good structure, which presents the authentic face of a grape too often trivialized with simple and young wines. Due to its characteristics, it pairs very well with a platter of cold cuts, pasta with tomato sauce, shellfish, or with pizza. Of a beautiful pale pink color with bright coppery reflections, it seduces the nose with aromas of dried rose petals, medicinal herbs, ripe citrus, pink grapefruit, pomegranate, white peach, and delicate spicy nuances. Rich and broad, it offers harmonious and enticing aromas, with a soft, rich, and enveloping fruit, well balanced by a fresh and pleasantly savory finish.
