'SASSOALLORO' JACOPO BIONDI SANTI 2022 DESCRIPTION

'Sassoalloro' is the most representative label of Jacopo Biondi Santi's Castello di Montepò estate, a pure Sangiovese Grosso that reflects the Mediterranean character of the Tuscan Maremma. It is an expression of Sangiovese Grosso BBS 11, the prestigious clone that the Biondi Santi family has reproduced in the Montalcino area and that Jacopo brought with him to Maremma in his adventure, which he embarked on in the 1990s. In particular, 'Sassoalloro' was first produced with the 1991 vintage and owes its name to an erratic boulder of volcanic origin located near the estate.

Castello di Montepò - Jacopo Biondi Santi 'Sassoalloro' is made with only Sangiovese Grosso grapes grown on galestro soils. After harvesting, carried out entirely by hand, the grapes are vinified in red by alcoholic fermentation in contact with the skins in stainless steel tanks, the same wine containers where malolactic fermentation takes place. Once the fermentation processes are complete, the wine is racked into French oak barrels for aging for 12 months prior to bottling and further resting for a few months in glass.

To the eye, the 'Sassoalloro' from the Jacopo Biondi Santi - Castello di Montepò winery reveals a brilliant ruby red color with violet hues. The aromatic set brings with it crisp scents of wild berries that combine with floral and sweet spice hints, as well as intense balsamic nuances. In the mouth it is rich and balanced, with a soft tannic texture accompanying the lingering fruity and spicy finish. Because of its highly territorial character, 'Sassolloro' can be paired with typical dishes of the Tuscan Maremma, such as wild boar stew or pappardelle with hare ragout.
