PROSECCO DI VALDOBBIADENE SUPERIORE DRY MILLESIMATO COL VETORAZ 2022 DESCRIPTION

Prosecco di Valdobbiadene Superiore Dry Millesimato by Col Vetoraz was born in the territory that stretches between the hills of Valdobbiadene and Conegliano, historically vocated to the production of excellent quality Glera. The winery was founded in 1838 by the Miotto family, which has always sought to communicate the authenticity and history of Prosecco, which originates in this slice of Italian territory that in recent times has been abused and reduced solely to an industrial and commercial vision. To avoid reductive generalisation, the word 'prosecco' has been removed from all the winery's product labels, preferring to use only the word 'Valdobbiadene', the only true territorial identity.

The vineyards of Prosecco di Valdobbiadene Superiore Dry Millesimato di Col Vetoraz are located in Valdobbiadene in the most favourably exposed hilly area. They extend for about 20 hectares totally planted with vines and the altitude is around 400 metres above sea level. The soil is mainly composed of limestone, siliceous and skeletal sediments for wines with a strong character; the climate is characterised by cold winters and sunny summers, with significant temperature swings between day and night, a phenomenon that allows the grapes to preserve their intrinsic freshness and aromaticity. Harvesting is carried out manually between mid-September and early October; in the cellar, the grapes undergo soft pressing, static decantation and alcoholic fermentation in steel. Refermentation lasts between 30 and 40 days, after which there is an ageing period of 1 to 3 months. It re-ferments in the bottle according to the dictates of the Charmat Method.

To the eye, Prosecco di Valdobbiadene Superiore Dry Millesimato di Col Vetoraz is straw yellow with brilliant reflections, while the perlage is fine and persistent. The aromas are reminiscent of rose, acacia and vine blossom in combination with white peach, pear, apple and citrus; on the palate it is elegant, aromatic and enveloping with good persistence and freshness on the finish for a curious drink. It is perfect paired with light canapés, smoked pitch and first courses with crustaceans and shellfish; also interesting with spoon desserts. Perfect to accompany toasts and celebrations with work colleagues or for important family occasions, to enjoy the authenticity of Valdobbiadene.
