Pascal Agrapart's Champagne Extra Brut Blanc de Blancs Grand Cru "Terroirs" is a wine from the Côtes des Blancs, specifically from Avize. The winery was founded in 1894 by Arthur Agrapart, great-grandfather of the current owners; today, it is managed by Pascal and Fabrice Agrapart, who represents the fourth generation at work. This presents itself as a Maison de Récoltant Manipulant (R.M.) since every stage of production and grape processing is managed and controlled in-house. The approach to cultivation is natural, and at the same time, sustainable work is perpetuated that respects the ecosystem surrounding the vineyards.

The grapes of Pascal Agrapart's Champagne Extra Brut Blanc de Blancs Grand Cru "Terroirs" grow on soil that is fully plowed and tended annually with the addition of organic compost, made from local ingredients: this combination ensures the healthiness and fertility of the soil. This wine is made by blending musts from two different vintages of grapes placed in Avize, Oger, Cramant and Oiry. The soil is almost entirely composed of chalk, an ideal condition for Champagne to release all its intensity and freshness. The harvest is conducted manually; in the cellar, alcoholic fermentation takes place thanks to the action of indigenous yeasts in oak barrels and a refermentation in the bottle according to the dictates of the Champenoise Method. It ages 48 months on the lees.

Pascal Agrapart's Champagne Extra Brut Blanc de Blancs Grand Cru "Terroirs" appears in the glass a golden yellow with intense reflections. The bouquet of aromas is complex and is reminiscent of candied citrus, walnut and hazelnut, wildflower honey and the characteristic scent of freshly baked bread crust; on the palate, it is fresh, elegant and enveloping with good minerality and incredible persistence for excellent drinking. In pairing, it is perfect for aperitifs interested in elaborate and refined appetizers; perfect with raw fish tartare and elaborately cooked fish. An excellent product to reserve for an important or romantic dinner, to share a unique product that is the result of artisanal and conscious work.
