CHARDONNAY ELEVÉ EN FUT DE CHENE ANSELMET 2021 DESCRIPTION

The Chardonnay Elevé en Fut de Chene from the Valdostan Winery Anselmet is a high-quality white wine that reflects the exceptional nature of the Valle d'Aosta territory. Produced by Giorgio Anselmet, a renowned winemaker from the region, this wine embodies the elegance and sophistication typical of great Burgundy Chardonnays. The label, with its evocative name, suggests aging in French oak barrels that impart unique and complex characteristics to the wine.

The grapes used for this Chardonnay come from two parcels located in the municipalities of Saint Pierre and Villeneuve, at an altitude of 800-900 meters above sea level. These vineyards benefit from sandy soils of morainic origin, which give the wine remarkable minerality. Vinification is carried out with care and precision: after manual harvesting, the clusters are gently pressed and the must ferments in French oak barrels, specifically in Burgundian pièces, for about 25 days. This is followed by a aging period of 6-9 months still in French oak barrels, with the practice of batonnage, or stirring, which helps enrich the wine's aromatic complexity.

The Anselmet Chardonnay Elevé en Fut de Chene stands out for its lively straw yellow color with golden hues, anticipating a rich and enveloping aromatic bouquet. On the nose, notes of butter, toasted hazelnut, vanilla, and sweet spices emerge, followed by hints of citrus and white flesh fruit. On the palate, the wine is soft and creamy, with excellent balance between freshness and sapidity, culminating in a persistent and mineral finish. These characteristics make it ideal for pairing with structured dishes based on fish and shellfish, enhancing their flavors and complexity.
