Chardonnay en Novelin Didier Grappe 2018

Didier Grappe's Chardonnay en Novelin is a white wine in the 'Ouille' style, i.e., vinified with continuous top-ups. Vibrant and complex, fruity and mineral, it can give great emotions if left in the cellar a few years. We recommend pairing it with soft cheeses and fish starters

CHARDONNAY EN NOVELIN DIDIER GRAPPE 2018 DESCRIPTION

The Chardonnay 'En Novelin' by the French vigneron Didier Grappe stands as a pure and vibrant interpretation of the grape variety and the Jura region. Didier Grappe is a mild and discreet artisanal producer who prefers to let his wines speak for him, thanks also to his talent and the exceptional vocation of the vines he cultivates. He dedicates meticulous care to his 3.8 hectares of vineyards, cultivated by hand without the use of any synthetic chemicals, in full respect of environmental health. The appellation 'En Novelin' derives from the plot from which the grapes destined for this label come, located right behind Didier's house.

Didier Grappe's 'En Novelin' Chardonnay is a pure expression of the same white berry variety represented by vines over 50 years old. The plants, rooted in highly calcareous soils, are cultivated under certified organic regime. Harvesting is done by hand, and the grapes undergo gentle pressing followed by spontaneous alcoholic fermentation of the must between stainless steel tanks and fiberglass vats. The subsequent maturation phase of several months always takes place in stainless steel and fiberglass, following the ouille style, which involves periodic topping up of the container to keep it always full and thus avoid early oxidations. Throughout the entire processing, filtration or clarification operations are excluded, and even the addition of sulfites.

Didier Grappe's 'En Novelin' Chardonnay is straw yellow in color with golden reflections. From the glass emerge hints of lemon, grapefruit, pear, and green apple, embellished with mineral memories of salt. In the mouth, it stands out for its complex and precise character, with vibrant freshness capable of giving depth to the progression, accompanying the persistent salty trail.
