L'Accamilla is a white wine that can hold up to the most flavorful gastronomic pairings. It is made from indigenous grapes with skin maceration. It expresses sharpness and hints of aromatic herbs mixed with a slight briny note. Pleasant tannin, with great savoriness and freshness.

L'Accamilla di Camerlengo is a macération white wine that Antonio wanted to dedicate to his little dog, after whom it is named. Furthermore, the foundation of this wine is the desire to return to tradition, which did not foresee the separation between the solid part of the grape and the must during the vinification of white grape clusters. The 20-30 year old vines that give rise to the grapes from which this wine is made are predominantly Malvasia di Rapolla, Santa Sofia, a variety of Fiano, and Cinguli, a variety of Trebbiano toscano. The soil on which the vineyards are rooted is of volcanic type, with tuffaceous and calcareous composition, located at about 350 meters above sea level. Attention to the environment is a priority for the winery, and the desire to obtain distinctive grapes is evidenced by the organic regime followed between the rows and the care with which the work is carried out. It is worth noting how the winery itself has been shaped by the Roman architect in a functional way, not by chance the walls and floor are covered in coccio pesto, allowing the environment where the wines rest to breathe optimally. The vinification processes are never invasive. The grapes are destemmed and sent to traditional chestnut vats to carry out the alcoholic fermentation, which occurs in a spontaneous contact with the skins for 18 days. After a light pressing, the wine is racked, without undergoing clarifications and filtrations. The aging takes place for a short period of 2 months in French oak tonneaux. The addition of sulfur is minimal. The production of this wine gem is always limited. We recommend decanting it, or, once the natural residues have settled at the bottom of the bottle, gently pour the wine into the glass.
