Etna Bianco 'Mofete' Palmento Costanzo 2024

The most active volcano in Europe, Etna, serves as a backdrop to the vineyards from which the Palmento Costanzo winery assembles the "Mofete", a white wine that makes freshness and minerality its calling card. The estate extends over about 18 hectares completely terraced, supported by the characteristic dry stone walls made of lava stone; the production is monitored by Nicola Centonze, a winemaker whose experience always guarantees high-quality products. Just like this "Mofete", a white wine that gives voice to the northern slope of the volcano and from which all the beauty of the terroir of Etna emerges.

The "Mofete" is an Etna Bianco that the Palmento Costanzo winery creates from two indigenous Sicilian grape varieties, Carricante and Catarratto. The grapes come from vineyards located at an altitude between 680 and 750 meters above sea level, characterized by soils with a strong presence of volcanic sands and lava deposits; the training system is the typical alberello. After the harvest, strictly manual, the grapes are gently pressed, and remain to age in stainless steel containers in contact with the fine lees for 6 months, after which bottling operations are carried out.

This Etna Bianco "Mofete" takes on a straw yellow color in the glass. Flowers and fruits of Sicily, especially the renowned citrus fruits, express the main aromas that are perceived on the nose, which in the finish presents light balsamic sensations. On the palate, it is full-bodied, with a persistent sip from which a fresh and mineral taste stands out, ideal for making the drinking smooth. The "Mofete" is a bottle that is always opened with immense pleasure, especially in combination with recipes based on shellfish and seafood.
