The grapes undergo a 15-day maceration, after which they are spontaneously fermented by indigenous yeasts and aged for a few months in steel tanks. On the nose, notes of rhubarb, orange peel, and candied lemon dominate, and the sip is juicy and intriguing with light tannins.

It is one of the many stunning bottles from Melanie Pfister, the latest heir of a Domaine that has its roots back in 1780 in Dahlenheim. This land, located just a few steps from Strasbourg, was one of the most active wine-growing centers in the region and still today it is one of the most vocated areas of Northern Alsace. The Pfister family knows this well, as they produce artisanal gems every year from the typical local varieties, such as Pinot Grigio, Pinot Bianco, Gewurztraminer, Riesling, and Auxerrois. Melanie, a member of the Alsatian women producers' association, has carried on the family tradition, interpreting it with a more modern and innovative idea. However, the philosophy has always remained anchored to the protection and preservation of the integrity of the territory, aiming to concentrate it into exciting and never banal bottles.
The “Maceration” Pinot Gris is made with the same-name grapes in purity.coming from limestone soils, cultivated with biodynamic and organic practices. The selection of the grapes is done exclusively by hand, and the winemaking takes place in steel with skin maceration for at least 15 days and spontaneous alcoholic fermentation with indigenous yeasts. Maturation continues in steel for a few months.
The Pinot Gris “Maceration” has a deep and refined color that resembles a bright gold with amber and orange flashes due to the long contact with the skins. The nose bursts with rich and fragrant notes that start from orange peel, pass through fruity tones of small red fruits, and finish with sensations of almond and rhubarb. On the palate, it showcases a juicy and crunchy texture, making it a decidedly drinkable and very smooth wine. A hymn to Alsace!
