The sparkling wine Prosecco Superiore Extra Dry Asolo “Col del Sol” is born in the Tenuta d'Asolo Progress Country & Wine House, created by Dennis Bordin and his wife Beatrice with the intent to enhance a splendid territory. The estate extends around a magnificent 17th-century villa inspired by Palladio and includes 9 hectares of vineyards, cultivated in hilly areas. The agronomic management follows the principles of organic farming, using only sulfur and copper. The Glera grapes come from the company vineyards

located in hilly areas, on calcareous-clay soils, particularly suitable for white grape varieties. After the gentle pressing of the bunches, the free-run must is sent for fermentation, which takes place in temperature-controlled stainless steel tanks. The wine is then transferred to autoclaves for the sparkling process and the second fermentation using the Martinotti or Charmat method, which lasts about 6 months. Before bottling, the wine is added with liqueur d’expédition.
