Sotol Padre de Las Serpientes is a Mexican distillate handcrafted in the Chihuaha region. The plants reach maturity after about 20 years, and are baked in an underground brick oven After grinding using traditional methods, spontaneous fermentation takes place in open vats and finally double distillation. It can be used in blending to replace Mezcal and Tequila in iconic cocktails, to enrich them with sweet, smoky and mineral notes

The Sotol from the Mexican producer Padre de las Serpientes is an artisanal distillate characterized by its original and evocative aromas reminiscent of earth and burnt sugar. Sotol represents the national drink of the states of Durango, Coahuila, and Chihuahua, the latter being home to the Padre de las Serpientes distillery. It is a rather rare distillate in Europe, produced from the plant Dasylirion, also known as the “desert sponge” and “sotol” in Spanish, from which the drink gets its name. Archaeological findings suggest that sotol was processed to produce alcoholic beverages by the native populations of present-day Mexico, Texas, and New Mexico as early as 7,000 B.C. The distillation technique was introduced by Spanish colonists in the 16th century.

Padre de las Serpientes Sotol is produced from pure sotol harvested at full maturity, a process that can take up to 20 years. After cutting, the central core of the plant, called “cabeza”, is cleaned of its leaves and then subjected to a 3-day cooking process in special underground ovens fueled with walnut wood, whose combustion gives a characteristic smoky aroma. Once cooking is complete, the cabezas are cut, chopped, and soaked, then placed in open vats where only indigenous yeasts carry out the alcoholic fermentation. This is followed by double distillation in copper stills, and the distillate is then diluted and left to rest for a few months before final bottling.

The appearance of the Sotol from Padre de las Serpientes is transparent and crystalline. On the nose, intense smoky aromas emerge, enriched by earthy notes and hints of baked apple and burnt sugar. Soft and pleasantly rustic taste, with a long mineral persistence. The same producer recommends using his sotol as a substitute for tequila or mezcal to create classic cocktails like Margarita, Tommy’s, or Paloma.
