Caccia Al Piano's Vermentino 'Le Bozze' is a white wine that favours freshness and immediacy. The production process involves soft pressing of whole grapes and slow fermentation at low temperatures, techniques that maximise the aromatic profile of Vermentino. Subsequent ageing on the lees enriches its structure. The nose is reminiscent of white flowers, citrus zest and Mediterranean herbs, while the palate is smooth, salty and relaxed.
