The Selection Dr. Fischer is a modern and original bubble made with de-alcoholised wine. A project launched by the eclectic South Tyrolean Hofstatter, founder of the homonymous estate, from a selection of vineyards from Germany. The innovative technique involves separating the alcohol without compromising the varietal and aromatic notes of the grapes, giving life to a practically non-alcoholic sparkling wine, but at the same time fresh, lively and gastronomic. “Selection Dr. Fischer” is a surprising “Alcohol Free” sparkling wine, the result of an innovative process of de-alcoholization of wine that allows for an alcohol-free version. A project that originates from a selection of noble German vineyards by Martin Foradori Hofstatter, one of the first Italian producers to venture into Germany to invest in local vineyards, particularly in the production of Riesling, a grape that Hofstatter knows very well. From the potential of this variety, he wanted to create an innovative and modern sparkling wine that could express itself in an alcohol-free version, keeping all the aromas and varietal flavors intact.
Regarding the production method of the “Steinbock Alcohol Free Sparkling,” we quote the words of its creator, Foradori Hofstatter: “This is not grape juice, but a sparkling drink obtained from wine that comes from careful selection in the vineyard and then in the winery. An innovative technique preserves the delicate aromas of the wine, removing the contained alcohol. Inside a device, the atmospheric pressure is reduced (to about 15 mbar), which also lowers the boiling point of alcohol from about 78°C at about 25-30° C.”. Although it is not the first alcohol-free sparkling wine on the market, it is still the first idea of a de-alcoholized wine made by a large Italian house using a raw material of the highest quality from Germany.
The Alcohol Free Sparkling “Steinbock” by Hofstatter is an elegant alternative designed for those who cannot or do not want to drink alcohol, yet do not wish to abstain from a convivial toast in company. With a straw yellow color and greenish reflections and fine perlage, it offers sweet notes of white-fleshed fruit, flowers, and traces of hydrocarbons, typical of the grape variety. The sip is slender, light, dry, and lively, with great freshness and pleasant minerality. We recommend it to be enjoyed with appetizers, aperitifs, and finger food, or it is also suitable as an ingredient for non-alcoholic cocktails!
