The Calvados Pays d'Auge 8 Years represents a true glorification of the raw material, that apple which is cultivated with such care by Jean-Roger. In fact, speaking of “apple” in the singular is highly reductive, since the distillery can count on as many as 30 different varieties of trees, thus able to provide fruits with decidedly different nuances among them. A Calvados with a timeless profile, where the aroma of apple blends with hints of sweet spices, leading to a refined and smooth sip.
This Calvados Pays d'Auge 8 years is born from a very careful selection of apples made by Jean-Roger, owner of the Roger Groult distillery. There are indeed 23 hectares where 30 different varieties of apples are cultivated, divided among 5,300 trees. Once harvested, they are pressed, and then processed from October to December to obtain a sweet must of absolute quality. A particularity that distinguishes the distillates signed by Roger Groult is that, at this stage, although the regulations allow for the addition of small percentages of pears to the preparation, this possibility is not considered at all by Jean-Roger, who therefore offers labels exclusively made from apples. The subsequent distillation is double, and uses three very old small stills. The final distillate then ages for 8 years in oak barrels.
