The attack on the palate is smooth, with great freshness and fluidity, followed by a rich savouriness and a typical bitter almond note. The bubbles are extremely fine, a hallmark of the ‘Dom’s’ great elegance.
The Champagne Extra Brut Rosé “Dom Ruinart” from the renowned Champagne house Ruinart is a sparkling wine of sublime charm and elegance, produced from a solid Chardonnay base with the addition of 15% Pinot Noir vinified as red wine. The origins of the Ruinart sparkling house date back to the 17th century, when the Benedictine monk Dom Thierry Ruinart began experimenting with sparkling winemaking, inspired by rumors of a lightly sparkling wine that was very popular among the Parisian aristocracy. The craft was later passed on to his nephew Nicolas Ruinart, who in 1729 officially founded what is today the oldest Champagne house.
Ruinart Champagne Rosé Extra Brut “Dom Ruinart” is produced from a blend of Chardonnay (85%) and Pinot Noir (15%). The Chardonnay comes from Grand Cru vineyards in the Côte des Blancs, located in the villages of Cramant, Avize, Chouilly, and Mesnil-sur-Oger, as well as from the Montagne de Reims in Sillery, while the Pinot Noir is exclusively grown in the Grand Cru village of Aÿ. The grapes, grown on chalk-rich clay soils, are hand-harvested and taken to the winery, where the Chardonnay undergoes gentle direct pressing, while the Pinot Noir is vinified as a red wine. Fermentation takes place in temperature-controlled stainless steel tanks, with full malolactic fermentation. After blending, the wine undergoes secondary fermentation in the bottle according to the Champagne method. Aging on the lees in bottle lasts for at least 11 years, after which disgorgement and Extra Brut dosage are carried out.
The “Dom Ruinart” Rosé Champagne Extra Brut by Ruinart displays a vivid pink color with copper reflections. Seductive aromas of blood orange, kumquat, violet, and peony are combined with complex notes of cinnamon, nutmeg, and ginger. On the palate, it is silky and aromatic, smooth and highly saline, with persistent bubbles that lead to a pleasantly bitter finish.
