The Fattoria Pomona Chianti Classico is made from pure Sangiovese grapes, grown in the surroundings of Castellina in Chianti. We are located about 350 meters above sea level, in a calcareous and clayey soil rich in microelements. The harvest takes place during the first half of October. The must ferments in steel, macerating in contact with the skins for 18-24 days and also undergoing malolactic fermentation. The final aging lasts for 26 months, 15 of which are spent in Slavonian oak barrels, followed by a passage in concrete tanks, while the last six months the wine ages directly in glass after bottling.
