The Cornalin produced by the Rosset winery presents itself as a fine and subtle red wine, dominated on the nose by fruity aromas enriched by a light spiciness. The palate announces itself as dry and slightly tannic, highlighting with precision the characteristics of the starting varietal, that indigenous Cornalin which few, outside of the Valle d'Aosta, know. One more reason to taste this bottle, with the adventurous spirit of those who are about to expand their knowledge. At the table, it feels at ease especially with meat-based menus, creating an interesting pairing especially with risottos, particularly one accompanied by a mushroom sauce.
This Rosset Cornalin is born from pure grapes of a varietal found only in Valle d'Aosta, cultivated in various parts of the region, the Cornalin. The Rosset winery nurtures it in vineyards located about 750 meters above sea level, characterized by a sandy and clayey subsoil, exposed to the north and south. Manual harvesting begins during the first decade of October; a cold prefermentative maceration is carried out, with temperature control. The subsequent fermentation takes place in steel containers, while the final aging occurs for several months in amphora.
