The Kolbenhof vineyard has a perfect microclimate for this type of grape, which, from soils composed of clay, gravel and limestone, derives the ideal structure and aromatic quality later transmitted to the final wine. Work in the winery involves crushing the grapes, as it is desired that the must rest a few hours in contact with the skins to enhance the varietal characteristics. After soft pressing and settling of the must, alcoholic fermentation in temperature-controlled stainless steel follows. The refining phase is carried out in steel on fine yeasts for 8 months, which are stirred weekly through the bâtonnage technique.
