AKA's ‘Genmaicha’ is a Kombucha you don't expect, re-fermented like a Classic Method sparkling wine. It is made from Genmaicha tea, a tea with roasted rice that lends roundness and buttery notes to the final result. The green tea and water kefir, on the other hand, complete the experience with a unique silkiness that is immediately perceptible on the palate. The Kombucha ‘Genmaicha’ crafted by the young Italian producer AKA is configured as a high-quality kombucha, made using the prestigious Classic Method starting from Genmaicha tea. Genmaicha is a Japanese tea derived from the combination of green tea and roasted brown rice, historically known as “tea of the people”, as the use of rice made the blend much more affordable, allowing even the poorer classes to purchase it. This tea is also called “popcorn tea”, because during the roasting process, some rice grains often pop, taking on a look similar to that of popcorn.

AKA ‘Genmaicha’ Kombucha is made from an infusion of Genmaicha tea, to which raw cane sugar and a symbiotic culture of yeasts and bacteria characteristic of kombucha, called “scoby”, are added. This culture carries out the first fermentation, giving rise to peculiar aromas, with the fermented drink that is subsequently bottled with the addition of selected Champagne yeasts, agents responsible for the re-fermentation in the bottle according to the Classic Method. Throughout the production process, water kefir is also used, obtained from the fermentation of a solution of sugar and water by kefir grains.

Visually, the Kombucha AKA ‘Genmaicha’ shows a pale straw yellow color. The aromas range between notes of butter and green tea, complemented by inviting toasted nuances. On the palate, it is soft, almost round, with a full and silky body that gives way to a characteristic warm and buttery finish. This kombucha can be consumed on its own cold as a light aperitif thanks to its very low alcohol content, as well as being used in the preparation of alternative and refreshing cocktails.
