The Muffato from Castello della Sala, one of the estates of the Marchesi Antinori, is a luminous and seductive sweet wine. On the nose, it reveals great aromatic and taste intensity, with hints of candied fruit, honey, iodine notes, and almost marine hints on a citrus echo. On the palate, it is enveloping, and the botrytized process gives a well-integrated sweet sensation that emerges after the sip.
The “Muffato della Sala” from the Castello della Sala estate, owned by the Marchesi Antinori, is a rare and precious pearl, produced in limited quantities. It is not just a simple passito, but a muffato. This means that during the drying phase on the vine, the grapes are affected and covered by the so-called noble rot, Botrytis Cinerea, which brings a complexity and a personality that are absolutely unique. It is a rather rare phenomenon on Italian soil, unlike the French region of Sauternes, and the signature of Antinori has sought to push excellence to this precious shore. For this phenomenon to occur, the simultaneous presence of multiple environmental and climatic factors is necessary, which can be found near Orvieto, in Umbria. The “Muffato della Sala” has unmistakable taste and aroma, defining a striking and fascinating personality.
the remaining part from Traminer and Riesling. These grapes come from vineyards with clayey soils rich in marine fossils, located at an altitude between 200 and 350 meters above sea level. Since it is necessary to carefully assess the degree of botrytization of the grapes, the harvest is carried out manually in multiple passes, thus multiplying the entries in the field and staggering the harvesting phases related to a single vineyard. Once in the winery, the grapes are further selected and then sent for gentle pressing. After the fermentation phase, aging begins in French oak barriques lasting about 6 months.
The Muffato di Castello della Sala has a brilliant golden yellow color. The aroma is intense and enveloping, with notes of candied fruit, honey, citrus, and the typical scents given by Botrytis that faintly recall saffron and many aromatic herbs. On the palate, it surprises with its perfect balance between sweetness and freshness, set within a full and enveloping body.
