Vinified using indigenous yeasts, this red wine is aged for 9 months in used oak barrels. It maintains a unique freshness that recalls the typical aromas of the terroir with hints of dark fruit, spicy notes, and aromas of violet.
The Saint Joseph “Les Cotes” is a pure Syrah that tells the story of the Northern Rhône Valley. It is made by Vincent Paris, a young and passionate vigneron, a descendant of the great Robert Michel, one of the brightest stars in the Rhône wine scene. Vincent started his career with a small plot of 1 hectare in Cornas, but over the years he has acquired and inherited other lands, now counting about 9 hectares of vineyards, distributed between Cornas, Saint-Joseph, and the Vin de Pays territory. It is in the small vineyard of just over one hectare in Saint-Joseph that this red wine is born. A wine that manages to capture the nuances of the territory and the varietal notes of the grape, bringing them directly into the bottle, without the aid of artifices and invasive processes.
The “Les Cotes” is a product of the unspoiled nature of the place. A wild territory, at times even harsh, that allows the grapes to grow in harmony with the surrounding nature. Pesticides, insecticides, and all chemical herbicides are banned in the vineyard, so that the plant can nourish itself with what the soil offers. In the cellar, Vincent's belief is the same: spontaneous fermentations, no filtration, and an absolute ban on invasive processes such as clarification or stabilization. The aging takes place for 9 months in used wooden barrels.
The “Les Cotes” Saint Joseph takes on an intense and bright ruby red color, with bright violet reflections. The nose pulses with earth and forest, with small red fruits, cherry, light woody tones, and a Mediterranean and spicy nuance. The sip confirms what is perceived on the nose, surprising for its drinkability and pleasantness, extending into a juicy and fresh sip, but at the same time rich and deep. A true picturesque portrait of the Rhône!
