The Sauvignon “Stern” is a high-altitude white wine from South Tyrol characterized by enveloping aromas that tell the beauty of the scents of the starting grape, Sauvignon, whose fruity and floral notes tease the palate with elegance. A bottle signed by Cantina di Caldaro very versatile in the kitchen, perfect to drink right away or to consume in a couple of years, to taste it in a more evolved version.
The “Stern” is a Sauvignon that comes from the homonymous grapes, used in purity by the team of Cantina di Caldaro to create this label. The vines are between 10 and 20 years old, and they grow using the Guyot system, in hillside vineyards located at an altitude between 450 and 550 meters above sea level, exposed to the south and characterized by a significant temperature range. The terroir is mainly composed of a medium-textured calcareous subsoil, with the presence of many minerals. The grapes, once they arrive in the facilities designated for winemaking, ferment slowly at a controlled temperature of 20 degrees in steel and, for a small percentage of the total mass, in wood. The aging lasts for five months on the fine lees and is carried out in steel containers.
The white wine Sauvignon “Stern” presents itself to the visual examination with a typically straw-yellow color, crossed by reflections that tend more towards greenish. On the nose, distinct floral and fruity sensations are perceived, which, in the finish, also shift towards exotic scents. On the palate, it is full-bodied, flavorful, and tasty, with a full sip, characterized by a pleasant savory texture; it ends with a finish that closes with excellent persistence. A bottle with which Cantina di Caldaro reconciles the main critics of the sector, both Italian and foreign.
