"Solare" by Fattoria Castellina is an atypical and unregulated interpretation of Vermentino, produced in Tuscany with a maceration on the skins for 4 days and an aging in barrique and in cement. A liquid concentrate of Mediterranean scrub, rosemary and broom with a lively and whipping sip, animated by deep salty verve and spices; to chew and interpret sip after sip.

The “Solare” is the only white wine produced by Fattoria Castellina in the province of Florence. It is a pure Vermentino, with which the winery aims to uproot the beliefs of those about to taste it. The maceration on the skins and the processing, partly carried out in wood, give it thickness and depth, from which emerges the richness of the Mediterranean scrub on the nose, a prelude to a vibrant and almost chewable sip, dominated by a jovial savory imprint. Undoubtedly an interesting label, born from a work philosophy inspired by biodynamics. 

This “Solare” from Fattoria Castellina is a wine that comes from the pure use of a white grape variety widely cultivated within the Tuscan borders, the Vermentino. The vineyards where this grape grows are about 15 years old and are located about 250 meters above sea level, on a mainly sandy and loamy soil. The must ferments spontaneously thanks to the presence of indigenous yeasts, macerating for 4 days on the skins; the malolactic fermentation then takes place in barrique. The subsequent aging phase takes place in three different stages: first 2 months in barrique, then several months in cement, and finally, after bottling, another three months directly in glass.

The white wine “Solare” reveals itself to the eye with a typically straw yellow color, characterized by light orange reflections at the rim. The Mediterranean scrub dominates the first moments of the olfactory examination, then shifting towards hints of aromatic herbs, flowers, and spices. On the palate, it is medium-bodied, lively, and dynamic, with a savory texture that in the finish turns towards a slightly spicier taste.
