Callmewine's FavouritesThe Tequila Plata Cascahuin is a weber blue agave distillate made with authentic procendiums, without dilution or filtration, in honour of its founder. A tequila with an exuberant character and refreshing herbaceous notes. Its palate presents a perfect combination of sweet and bitter. The nose immediately reveals aromas of cooked agave and peppery hints, only later to release aromas of cardamom, walnut, coffee, honey and butter, without losing the dry earth and mineral characteristics of the Jalisco Valleys
Tequila ‘Plata 48’ is a fine and expressive Mexican distillate produced in the state of Jalisco by the family-run distillery Cascahuin and dedicated to the founder Salvador Rosales Briseño. The category ‘Plata’, also known as “Blanco” or “Silver”, identifies those tequilas produced without any aging phase, bottled directly after distillation, thus expressing the purest and clearest face of tequila. The term ‘48’ refers instead to the alcoholic strength of the distillate, once released at approximately these gradations while today largely produced with an alcoholic volume of 38-40%. The ‘Plata 48’ thus intends to evoke the established tradition of the most famous Mexican distillate.
The ‘Plata 48’ Tequila Cascahuin originates from only blue Weber agave hand-harvested at full ripeness when the plant has reached an age of 8-10 years. The agave is also manually cleaned in such a way as to extract the sugary heart, called “piña”, which is then cooked in traditional stone ovens. This is followed by the alcoholic fermentation phase in stainless steel tanks in the absence of the fibers of the piña, at the end of which the fermented product is double distilled through copper and steel stills. The tequila is finally slightly diluted with a small addition of water before the final bottling. Throughout the entire production process, the use of any additives is banned.
Crystalline and transparent is the appearance of the Tequila ‘Plata 48’ of Cascahuin. On the nose, decisive and generous scents of cooked agave and citrus emerge, meeting peppery nuances and fresh herbal aromas. Rich and refreshing tasting, endowed with a certain exuberance and a harmonious and persistent finale of excellent taste-olfactory correspondence.
