The Vermentino di Sardegna “Billia” is born as a tribute and recognition to the founder of the winery, Giovanni Cherchi, known as “Billia”. It is a wine rich in meaning, with which Cherchi aims to give the best of himself, presenting a complete profile, where aromas and flavors envelop the nose and palate, telling us about the terroir of origin, which becomes the undisputed protagonist thanks to a Mediterranean imprint. An elegant, refreshing, and savory bottle, which pairs well with seafood dishes and fresh cheeses, perfect for indulging in a sip of quality.
This “Billia” is a Vermentino di Sardegna that comes from the pure use of the white grape variety par excellence of the region, the Vermentino. The vines of this variety grow in parcels owned by the Cherchi winery located about 200 meters above sea level, sinking their roots into a calcareous and clayey subsoil. The grapes, once harvested, are destemmed, crushed, and gently pressed, then fermented alcoholic in stainless steel tanks. The wine remains then rests for 6 months in steel, until the bottling and marketing procedures begin.
The Vermentino di Sardegna “Billia” produced by the Cherchi winery presents itself visually with a typically straw-yellow color, crossed by reflections that tend more towards greenish, especially at the rim. The olfactory spectrum is characterized by primarily fruity and Mediterranean notes, which envelop the nose in an orderly manner. On the palate, it is light-bodied, balanced, slender, and agile thanks to a particularly savory sip that encourages drinking. An interestingly priced Sardinian white, which fully qualifies to be elected as the perfect everyday wine for summer.
