The international success of the Classic Method has also stimulated both quantitative and qualitative growth of Italian bubbles, which today are offered on the market with a range of denominations and labels of excellent quality. The Italian peculiarity lies in the possibility of using, in addition to the two most famous grape varieties of Champagne, Pinot Noir and Chardonnay, many native varieties that have shown a remarkable propensity for sparkling wine production. The history of the Italian Classic Method began in Piemonte. Around the mid-nineteenth century, Carlo Gancia went to Reims to learn the secrets of Champagne. Upon returning home, he and his brother Edoardo founded the Fratelli Gancia company and in 1865 produced the first Italian Classic Method using Moscato Bianco grapes. Subsequently, the region chose theMartinotti and Charmat method for the sparkling production of Moscato, dispersing this historical heritage. Even if in Oltrepò Pavese, at the beginning of the twentieth century, experiments began to produce the Classic Method, the true rebirth of the Italian Classic Method is due to the post-war period, both with the growth of production in Oltrepò, but especially thanks to the contribution of Franciacorta. The Brescia denomination decided to focus solely on the Classic Method and today it is a famous brand worldwide for the excellence of its production. In recent decades, other denominations dedicated exclusively to the Classic Method have emerged and are currently experiencing strong growth, particularly Trento Doc and Alta Langa Docg. Today, interesting Classic Method labels are produced in all Italian regions, from Valle d'Aosta to Sicilia, and the native bubbles are a peculiarity that holds pleasant surprises.
