Intense and persistent aroma, varietal finesse, and ample balsamic refreshment are the prelude to a vibrant, full, and juicy sip, with practically infinite persistence.
The Barolo "Paiagallo" by Giovanni Canonica is a tribute to the Langhe, a rare and austere expression of Barolo, hard to forget after tasting it. We do not exaggerate when we talk about iconic wines, fully attributing that of Giovanni Canonica, a name always sought after by those in search of true, expressive, and uncompromising wines. In an area like Barolo, which has perhaps culpably shifted more and more towards vine-centered agriculture, it is not taken for granted to come across faithful and territorial expressions, although for Giovanni it has always been the only productive intent to pursue. An authoritative representative of traditional and classic Barolo, Giovanni has been tending about 3 hectares in the municipality of Barolo since 1983, cultivated without any chemical or synthetic substances, in absolute respect of vine and territory. Rigorously aged in large barrels and spontaneous fermentations complete the picture, for what is effectively a heartfelt Barolo.
The "Paiagallo" Barolo is produced according to the regulations with pure Nebbiolo grapes, coming from from the homonymous cru located in the municipality of Barolo. No herbicides or chemical substances are used in the vineyard, while in the winery all alcoholic fermentations occur spontaneously, with long macerations on the skins and no temperature control. The liquid ages for at least 36 months in large Slavonian oak barrels and concrete.
The "Paiagallo" Canonica shows itself in its unmistakable garnet hue, rather light and transparent. The liquid is captivating from the first sniff, a detailed compendium of the Barolo area made of dog rose, underbrush, balsamic notes, and cherry. Territoriality and austerity, a recurring pair also in tasting, where the liquid, especially in youth, shows itself tight and deep, capable of extending into an unquantifiable persistence. A bottle that defies decades.
