The "Cecubo" by Villa Matilde is a red wine from Campania, originating from the province of Caserta, aged for 12 months in new Allier oak barriques for one third. Based on Piedirosso, Primitivo, and other unknown indigenous varieties, it expresses an intense aromatic bouquet through notes of plums, berries, vanilla, and cocoa, accompanied by scents of licorice and tobacco, revealing a full, structured, and elegant sip.
The "Cecubo" from Villa Matilde is a Campanian red wine, produced in the lands of Agro Casertano, with a blend of PIedirosso, Primitivo, and a small percentage of other minor native varieties. It is a wine of good structure and aromatic complexity, conferred both by the presence of several grape varieties with different and complementary characteristics, and by the long aging in barrique. The passage in wood allows for the development of tertiary evolution notes, which enrich the aromatic spectrum of this interesting and original wine.
The "Cecubo" wine from Villa Matilde originates in the countryside of Cellole, a small town in the province of Caserta. It is a production reality that extends over a total of 120 hectares, distributed between Cellole, the Tenute di Altavilla in the Avellino area, and the Tenuta Rocca dei Leoni in the Sannio Beneventano: three different territories but all with great traditions in viticulture. The project arises from the desire to recover and attempt to produce today the "Falernum" and the "Cecubo", two famous wines from ancient Roman times.of the ancient Romans and other quality labels with a strong connection to the territory. The "Cecubo" is produced with grapes from vines cultivated in the San Castrese locality, near the ancient extinct volcano of Roccamonfina. Fermentation takes place at a maximum temperature of 26 °C. The wine then matures for 12 months in Allier oak barriques, one third of which are new.
The red "Cecubo" produced by Villa Matilde is the modern reinterpretation of a famous wine from antiquity, interpreted according to modern enological knowledge and practices, which are obviously very different from those used by the ancient Romans. In the glass, it presents a dark garnet color, almost impenetrable. The aroma expresses notes of berries and ripe plums, soft hints of vanilla, cocoa, and licorice. The taste is dense with aromas, intense and persistent with a fine and soft tannic texture. The finish is harmonious and elegant.
