The "Plénitude 2" Brut by Dom Pérignon is a Champagne vintage of great charm and elegance, intense and extraordinarily balanced, produced by the famous Maison in Épernay, in the Champagne-Ardenne region of France. This label is a blend of grapes, the result of the canonical combination of the best selections of Chardonnay and Pinot Noir varieties, exclusively from owned Grand Cru vineyards, located in the communes of Ay, Bouzy, Verzenay, Mailly, and Hautvillers for Pinot Noir, and from those of Cramant, Choully, Avize, and Le Mesnil for Chardonnay. After several years of studies, tastings, and comparisons, Richard Geoffroy, chef de cave of Dom Pérignon, discovered that after the 7-8 years of aging on the lees required for the classic vintage, Dom Pérignon Champagne continues to improve, but not gradually, rather making two significant leaps: the first after about 15 years and the second after more than 25 years. From this, two new labels are born, respectively "P2", or Plénitude Deuxième, and P3, which express the various plénitudes, or windows of time in which the Champagne suddenly enters a new "fullness."

The "Plénitude 2" Dom Pérignon Brut is made from carefully selected grapes in the vineyard and handpicked in small crates. The 2004 vintage is memorable in the history of Dom Pérignon Champagne for its simple and generous character. Despite the overall moderate climate, characterized by a relatively cool August, the dry heat of the final weeks shaped the vintage. Fermentation takes place in stainless steel containers at controlled temperatures for several weeks to obtain the base wine of the vintage. This is followed by the addition of the liquer de tirage for the prise de mousse and subsequent refermentation in the bottle, where the wine remains aging on its own lees for almost 15 years before disgorgement and topping up with the addition of liquer d’expedition, as per the brut category.

The Brut "Plénitude 2" by Dom Pérignon presents itself with a brilliant golden yellow color and a very fine and delicate perlage. The 2004 vintage starts discreetly, but its character asserts itself during the wine's maturation phase. Notes of grapefruitrose and blood orange give way to hints of fig. On the palate, it is creamy, energetic, light, and refined, the sip evolves with elegance, between tension and lightness. Its precision is of exceptional finesse, with a tactile texture and deep depth. The Plénitude 2 is a vintage champagne that pairs perfectly with various gastronomic preparations. Its creamy consistency is highlighted when paired with green tomato sorbet. To explore its balance, it can be served with roasted pineapple, candied citrus peel, and anise.
