The Fiano del Salento ‘Folium’ from the De Quarto winery represents a fragrant and floral interpretation of this white grape variety of Greek origin, widespread in Campania and Puglia, as well as in other regions of Southern Italy. It seems that Fiano was introduced to the Apulian territory towards the end of the 13th century by Charles II of Anjou, although it was probably present in the region even earlier. The aromatic nature of this wine is highlighted by the very name on the label, as the Latin term “folium” means “petal”.
De Quarto Fiano del Salento ‘Folium’ is made exclusively from Fiano grapes grown without the use of synthetic chemicals. The vines are cultivated in the Apulian bush-trained style on red and calcareous soils in the municipality of Lizzano, close to the Ionian Sea. The harvest is carried out entirely by hand in the first decade of August, and the bunches are then transferred to the winery and vinified in white with soft pressing and alcoholic fermentation at controlled temperature in stainless steel tanks. The subsequent aging phase, which lasts for several months, also takes place in steel, and the wine is finally marketed after a further short resting period in the bottle.
In visual examination, the Fiano del Salento De Quarto ‘Folium’ reveals an intense straw yellow hue. Soft and intriguing aromas of melon, peach, orange peel, and jasmine describe the aromatic profile along with resinous and iodized hints. The taste development is fragrant, delicate, and easy to drink, characterized by bright freshness and a long savory finish where fruity and floral sensations re-emerge. This Fiano is the ideal companion for appetizers or seafood first courses, especially those based on shellfish or mollusks.
