ArtisanalGrauburgunder from the German winery Enderle and Moll is a tasty and enjoyable macerated Pinot Grigio perfect for surprising guests. The grapes are carefully selected by hand, the vinification process involves the sole use of indigenous yeasts and a 4-5 day maceration on the skins before ageing in stoneware barrels for at least 10 months. The bright orange colour introduces citrus and balsamic sensations while the palate enjoys a fresh, explosive and decidedly unusual sip
The Grauburgunder by Enderle e Moll is a pure Pinot Grigio macerated on the skins with a peculiar coppery color and a dynamic character. The artisanal winery Enderle & Moll is located in the wine region of Baden, in southwestern Germany, where since 2007 it has been producing high-quality bottles with a well-defined style. A fundamental value of the production philosophy of Sven Enderle and Florian Moll, friends at the helm of the estate, is to leave maximum expressive freedom to the territory, without invasive sophistication and artifices. “Grauburgunder” is nothing more than the German name for Pinot Grigio.
Enderle e Moll Grauburgunder consists solely of Pinot Grigio grapes grown according to the dictates of biodynamics on limestone soils rich in marine fossils. Following manual harvesting, the clusters are placed in clay barrels for spontaneous alcoholic fermentation accompanied by 4-5 days of contact between the must and the skins. After racking, the mass continues the fermentation process and undergoes the subsequent aging in the same clay barrels for 10 months, during whichwhich 40% of the skins are left in infusion. Throughout the entire processing, the liquid is not subjected to any clarification or filtration.
Visually, the Grauburgunder Enderle e Moll expresses a characteristic bright orange color with coppery reflections. From the glass emerge fresh and articulated perceptions of citrus, red fruits, and balsamic herbs, enriched by elegant mineral hints. On the palate, it surprises with structure, agility, and explosiveness, with the slender fresh-salty vein that preludes to the long mineral epilogue. A macerated Pinot Grigio capable of combining depth and momentum, for this reason comparable to a substantial traditional dish from the Baden region: käsespätzle, gnocchi seasoned with abundant cheese and fried onions.
